Added 10 to 12 cups of water and 3 to 4 chicken cubes and brought to boil. Additional salt may be added to taste. Added two packages of spaghetti noodles. Right before noodles are ready remove and set aside one to two cups of the broth. Remove noodles to collander.
Spray casserole dish with cooking spray and add noodles. Fold in previously cooked chicken, two cans of cream of mushroom soup, two cups of the reserved liquid, and half a cup of a shredded Mexican Cheese blend. The more daring may also add a few drops of a favorite hot sauce. We tend to like Crystal River in this house. Top with three cups of sharp cheddar cheese and drop into a 350° oven for 25 to 30 minutes. Remove once top begins to brown.
Serve and top with chopped green onions!

Serve over commercial gluten free spaghetti noodles. Cook according to package directions. Keep and eye on noodles as they tend to stick more than standard spaghetti noodles.
